One Pan Creamy Garlic Parmesan Pasta

My recipe for an Italian inspired pasta dish. Rich, easy to make, and filling; you might be surprised at how good a one pan dish can be! Good food does not always need all the pans, the oven and all the utensils. 

When making this I used dried parsley, however, as with all herbs, if you have fresh even better. The chilli flakes in this dish only add a mild background warmth. Feel free to use more, or less, to your taste.


One Pan Creamy Garlic Parmesan Pasta

Prep Time: 10 min

Cook Time: 20-30 mins

Ingredients:

  • 100g Grated Parmesan
  • 250g Pasta (Spaghetti, Linguine etc but any pasta will work!)
  • 250ml Whole Milk
  • 500ml Stock (Chicken or Veg)
  • ¼ tsp. Chilli Flakes
  • 1 tbsp. Parsley
  • Salt & Pepper to taste
  • 2 tbsp. Butter
  • 2 tbsp. Olive Oil
  • 1 Onion
  • 4-5 Cloves of Garlic

Method:
  1. Slice up the onion very finely, the smaller the better for this dish, and mince up the cloves of garlic.
  2. Add the butter and olive oil to a pan on medium heat, then add the onions. Fry gently until the onions are soft. Add in the garlic and cook for a further 2-3 mins.
  3. Add in the stock, milk, salt, pepper, chilli flakes and parsley. Stir and bring to a simmer then add in the pasta.
  4. Cook the pasta to your liking (I personally recommend "al dente"), stirring occasionally to ensure it doesn't burn.
  5. Once the pasta has cooked add in the parmesan and stir until melted and combined. If you find the sauce is too thick add a splash of milk to thin it down a bit.
  6. Plate up and serve straight away!
