Apple Strudel

Time for dessert! An easy and straightforward but satisfying recipe that follows very well just about any meal. An ideal autumn or winter dessert for those colder nights where the combination of spices and a warm sweet apple dessert, that to me, conjure up images of cold, rainy nights and a roaring fire at home as a child.


Apple Strudel

Prep Time: 15 mins

Cook Time: 25 mins (or until golden brown)

Ingredients:

  • 1 Packet of Filo Pastry
  • 3 Large Apples
  • 80g Raisins
  • 100g Brown Sugar
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Ground Ginger
  • ¼ tsp. Ground Cloves
  • Pinch of Salt
  • 80g Melted Butter


Method:

Pre-heat oven to 200C (180C Fan)
  1. Peel, core and slice up the apples into a large bowl, then add in the spices, salt, sugar and raisins. Mix thoroughly until the apples and raisins are coated in the sugar and spices.
  2. Lay the first sheet of filo onto a baking tray and brush with the melted butter.
  3. Lay the second sheet on top, this will provide a stronger base for the dessert. Add a line of filling to the middle of the pastry leaving a gap all the way around, brush the butter over the gap.
  4. Lay the third sheet over the previous layer and repeat the filling and butter steps.
  5. Repeat until the filling is used up, leaving at least 4 sheets of filo for the top.
  6. Brush butter over the edges of the last sheet you laid and fold the edges in on themselves.
  7. Brush butter over the entire dessert and cover with a filo sheet, repeat this with the other remaining sheets to create a nice even top to the dessert.
  8. Finish by brushing butter all over to help with browning in the oven.
  9. Pop in the middle of the oven for 25 minutes or until golden brown.
  10. Serve with custard, cream, ice cream or simply on its own!
